Warm Autumn Welsh Lamb salad with a warm fruity dressing

Method

    Place lamb loin chops under a preheated grill for 6-8 minutes each side (for 2cm (¾") thickness) - keep warm.

    Place plums, salad leaves, goats cheese and walnuts into 2 large salad bowls.

    Mix together the smoothie, oil and balsamic vinegar to make the fruity dressing.

    Top leaves with the chops and drizzle both plates with the dressing.

  • 50g (2oz) goats cheese, roughly cubed
