Welsh Beef Meatloaf, with piquant spiced sauce

Method

    In a large bowl thoroughly mix all the ingredients for the meatloaf, season.

    Line a greased 900g (2lb) loaf tin with pancetta slices. Place mixture into tin and press down well.

    Bake in a preheated oven for 40-45 minutes.

    Meanwhile dry fry the onion and garlic for 1-2 minutes, add cumin and the remaining sauce ingredients. Bring to the boil and simmer for 8-10 minutes.

    Serve the meatloaf, sliced with crusty bread and drizzled with sauce.
